ORANGE DREAM PIE

This frozen delight combines orange and vanilla to make a creamy, dreamy classic.  In addition to the Power Punch nutrients listed below, each serving is a good source of the following (based on percent of Daily Values):  13% of protein, 10% of vitamin A, 19% of riboflavin/B2, 15% of vitamin D, and 11% of potassium.

Crust Ingredients:Filling Ingredients:
  • Butter-flavored cooking spray
  • 12 reduced-fat vanilla sandwich cookies
  • 2/3 cup instant skim milk powder
  • 1/4 cup powdered sugar
  • 2 tablespoons fat-free margarine
  • 1/2 cup frozen orange juice concentrate, thawed
  • 1 cup canned, evaporated fat-free milk
  • 1/3 cup instant skim milk powder
  • 1 (3.4 ounce) box instant vanilla pudding mix

Spray a pie pan with cooking spray and wipe with a paper towel to spread evenly and absorb the excess.

Use a food processor to make crumbs from the cookies.  Combine the crumbs, milk powder, and powdered sugar.  Then add the margarine and mix until curmbs are evenly moinstened.  Press them into the bottom and part-way up the sides of the pan.

Combine the filling ingredients and mix well.  Pour into pie crust and refigerate until somewhat set.  Then put in the freezer.  Once frozen, cover with foil to keep fresh.
