MILK CHOCOLATE PEANUT FUDGE Makes 12 Servings I've always enjoyed a good challenge. And making fudge with no butter and with any redeeming nutritional value was certainly just that. I think this recipe was worth all of my experimenting! Spray an 8 or 9 inch square with cooking spray and wipe with a paper towel to spread evenly and absorb the excess. Combine the condensed milk, milk powder and margarine in a large non-metal bowl, nad mix well. Microwave uncovered for 30 seconds. Add evaporated milk and vanilla, and mix well until smooth and powdered milk is dissolved. Add the powdered sugar and cocoa powder, mixing well. Mixture will be stiff. Then add the peanuts and mix well. Spread fudge into pan and let sit in the refrigerator, uncovered, for 24 hours before serving. Then cover to keep fresh. |
