OATMEAL CRANBERRY COOKIES

Makes 24 Large Cookies (2 Cookies per serving)

These are awesome cookies -- a big hit with all of my taste-testers!  In addition to the Power Punch nutrients listed below, each serving is a good source of the following (based on percent of Daily Values):  16% of fiber, 11% of thiamin/B1, 10% of riboflavin/B2, and 10% of iron.

Ingredients:
  • Butter-flavored cooking spray
  • 2 cups quick oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup fat-free margarine
  • 1 1/2 cups brown sugar (packed)
  • 1/4 cup pure maple syrup
  • 1/4 cup fat-free egg substitute (make sure you select a brand that contains no onion or other seasonings)
  • 2 teaspoons vanilla extract
  • 2 (6-ounce each) bags of dried, sweetened cranberries

Preheat oven to 325 degrees.  Spray cookie sheets with cooking spray and wipe with a paper towel to spread evenly and absorb the excess.

In a medium bowl, combine the oats, flour, baking soda, and salt.  In a large bowl, combine the remaining ingredients, except the cranberries.  Add the dry mixture to the wet mixture and mix well.  Add the cranberries and mix well.

Drop large spoonfuls of dough onto the cookie sheets and bake for 20 minutes.  Cool on the pan for 5 minutes.  Then remove from the cookie sheet.
