Karen Pellegrin created the POWER DESSERTS concept and is author of two cookbooks.  For her first cookbook "Fat-Free Desserts", she developed techniques to bake delicious desserts with no fat.  In order to make desserts that are both delicious and nutritious, she combined these techniques with a varienty of nutrient-dense ingredients for her second cookbook "Power Desserts".    

Creating dessert recipes has always been a hobby and passion for Karen.  She has a Ph.D. in Clinical Psychology from the University of South Florida and an M.B.A. from The Citadel in Charleston, South Carolina.  She was a faculty member in the Department of Psychiatry and Behavioral Sciences at the Medical University of South Carolina for 8 years, Director of Quality Management for the MUSC Medical Center for 4 years, and an executive at Compass Point Research for over 7 years.
